Cabbage roll skillet
Ingredients
1.5 lbs. lean ground beef
1 tbsp. olive oil
1 large onion, chopped
1/2 medium head of cabbage, shredded
2 14.5 oz. cans of diced tomatoes
1 8 oz. can of tomato sauce
1 tbsp. palm sugar
3 tbsp. apple cider vinegar
3/4 cup water
3/4 cup long-grain white rice
kosher salt to taste
ground black pepper to taste
Instructions
Heat a large skillet over medium heat. Add 1 tbsp. oil and once hot add the ground beef, cooking and stirring for a couple minutes.
Add the onion, stir, and cook until the onion is translucent and the beef is browned.
Add the cabbage, tomatoes, tomato sauce, sugar, and vinegar. Cook and stir for 5 minutes.
Add the water and rice. Reduce heat to low, cover, and simmer for 30 minutes.
Add salt and pepper to taste.
